Frugal Tuesdays: Canned or Frozen Tomatoes Recipes

This week’s edition of Frugal Tuesdays is about tomatoes. In January. What the what? We’re talking canned and frozen tomatoes in these recipes because nobody should be buying fresh tomatoes this time of year, and canned tomatoes are one of the cheapest ingredients out there! Enjoy these recipes using canned or frozen tomatoes…only one of them involves pasta!

1. Tomato and Lentil Soup from Cheap Recipe Blog
This delicious and crazy-inexpensive soup rings in at just $2.53 for four servings! This recipe is one of four that author Haley has posted in her series The $10 Food Day – one day of four recipes for four at just $10!

2. “Fresh” Tomato Sauce by Smitten Kitchen
To be fair, this recipe really is intended for fresh tomatoes, but we make it all year long with the tomatoes we freeze or have canned and love it!

3. Pork and Green Chile Casserole from All Recipes
I love the fact that this recipe uses pork, not chicken…and yet is still super cheap. I think instant rice is for the birds, so in making this, I would just substitue cooked rice and add it in after the other ingredients in Step 1 are heated through.
