Frugal Tuesdays: Chimichurri Potato & Tomato Salad, Mashed Cauliflower, and Cheesy Broccoli Soup

#1. Chimichurri Potato & Tomato Salad from Poor Girl Eats Well
First of all, isn’t this a beautiful picture of food? I am new to this blog, and kind of smitten. She turns ordinary fall potatoes and tomatoes into something spicy and exotic with pretty basic ingredients…all of them in season. Huzzah!

#2. Creamy Cauliflower Mashed “Potatoes” from Steamy Kitchen
All of the ingredients besides the cauliflower are basic kitchen staples you should have on hand…apart from the sour cream. I think you could leave that out to make this recipe even cheaper.

#3. Easy Broccoli Cheese Soup from My Recipes
This recipe suggests using frozen broccoli. Please don’t. Broccoli is in abundance right now. Simply steam or boil your broccoli until tender crisp before using in this soup. All of the other soup ingredients are pretty standard…and most importantly, cheap!

  1. I really should try cauliflower mashed potatoes. I’m sure that my husband would notice a difference…but it’s all about feeling like you got that buttery starch and not necessarily the feeling you get after eating it, right? :)
