On the Cooking Club: Back-to-School Apple Cinnamon Oatmeal Breakfast Bars


This past weekend, all three of us had the pleasure of being involved in Eric’s brother David’s wedding to his beautiful bride Julia, and in all the preparation and bustle of the weekend, I totally forgot to link up to my latest contribution on the Cooking Club. In the spirit of kids going back to school and busy mornings and days that promise to be no warmer than a very autumnal 66*, I made these Back-to-School Apple Cinnamon Oatmeal Breakfast Bars.

Easy to make and BFF’s with your freezer, you can make batches ahead of time and pull them out individually as needed, plus they are full of apple-cinnamon goodness that makes the leaves want to change faster.

    • Jane – are you referring to the picture I posted on Instagram a few days ago? If so, you can find the recipe here. I used sauteed bell peppers and onions in place of the sun-dried peppers; I also didn’t have the arugula, but that would be a great addition. Finally, I made these in individaul ramekins instead of muffin tins b/c I was just making a few. Let me know if that’s not what you were talking about :)
