Season’s Eatings: Mexican Stuffed Pork Chops with Fresh Chopped Salsa


Today, I’m excited to share the next installment of Season’s Eatings: a guest series on seasonal recipes and tips that I’m doing for Amy of This HeArt of Mine. This month, I made Mexican stuffed pork chops – marinated pork chops stuffed with summer’s bounty: corn, bell peppers, tomatoes, jalapeños  garlic, onions, and more. We loved the result and topped the chops with a quick summer salsa that took about five minutes to throw together.
