Today, I’m the Guest Poster

Greetings from Newborn Land, a magical place of kissable cheeks and three-hour segments of sleep. We’re doing well, learning and celebrating all sorts of firsts. To be honest, I’ve barely set foot in the kitchen these last few weeks, with all of these fantastic guest posts and the abundance of kindness brought to our doorstep in the form of lasagnas, casseroles, and pies.

But prior to Owen’s arrival, Amy from This HeArt of Mine had asked if I wanted to be part of her Sum Sum Summertime Series, celebrating the official calendar kickoff of summer (Amy is GREAT at celebrating seasons!).  So a few days ago, I got myself back into the kitchen and made up one of my favorite summertime recipes – a vegetable quinoa salad with an Asian peanut vinaigrette.

  1. I love quinoa salad, but have always used a red wine vinegar dressing. The Asian dressing sounds very interesting….will try.

  2. I made this last night and it was fantastic! Super easy, but putzy and fun to put it all together. My favorite part was making the dressing. So much fun and crazy delicious! This was how I introduced my boyfriend to quinoa and now he’s hooked. Thank you thank you!
